Why grow Jerusalem artichokes

Tubers store well in the ground through winter and require almost no inputs once established. The crop is exceptionally productive in poor soils where many vegetables struggle.

A little history. Native to central North America and cultivated by Indigenous peoples before European contact, per records in Sturtevant's Edible Plants of the World. It is a true perennial sunflower, not related to the globe artichoke.

Sow seeds 4 inches (102 mm) deep, and aim for 18 inches (45 cm) between plants once thinned. Plant tuber pieces 3–5 inches deep; keep soil moist but not waterlogged until shoots break the surface. Seedlings emerge in 14–28 days.

Water deeply once a week during dry spells; established plants are drought-tolerant. Water when the top 2 inches of soil feel dry and lower leaves begin to droop slightly. Aim for about 1 inch per week including rain.

Side-dress (scatter fertilizer along the row and water in) once when shoots reach 12 inches; rarely needed in average soil. What to use: low-nitrogen balanced fertilizer or a thin layer of compost; excess nitrogen drives stem growth over tuber production.

Pinch or cut the growing tip when plants reach 5–6 ft to redirect energy into tuber development and reduce wind-rock; remove flower heads before seed set to limit self-seeding.

Harvest and store

It's ready when harvest after the first hard frost kills the tops — tubers are fully mature and flavor is sweetest then. Skin should be firm and knobby with no soft spots. Cut stems to 6 inches, then dig carefully with a fork 12 inches out from the base to avoid slicing tubers. Sieve the loosened soil to recover all small pieces, which will regrow if left.

Leave tubers in the ground and dig as needed through winter — they keep best in situ. Lifted tubers last 2–3 weeks in a perforated bag in the refrigerator; they shrivel quickly at room temperature.

Sweet Corn

Gardeners have long grouped these two at the back of the plot: both stand 6 ft or taller, so keeping them together means only one block of shade to plan around rather than two. No pest or soil benefit has been demonstrated, so treat this as a layout convenience.

Sunflower

Open sunflower heads feed hoverflies, lacewings, and tiny parasitic wasps, which often reduces aphid clusters on nearby stem tips. Both plants are in the same family and share white mold, so give them a few feet of air and clear all stem debris in fall.

Nasturtium

Aphids often settle on nasturtium stems before they find the taller crop. Check the nasturtium weekly and pull or hose off infested growth, otherwise it becomes a nursery rather than a trap.

Comfrey

Comfrey's deep taproot draws water and minerals from well below the tuber zone, so the two rarely compete in the top foot of soil. Cut comfrey leaves two or three times a season and lay them on the bed as mulch.

Keep it away from

Potato

Both hosts of verticillium wilt, a soil fungus that clogs stem tissue and yellows the lower leaves. Stacking them builds the fungus in one patch of ground, and stray sunchoke tubers left behind will sprout through the potato rows for years.

Tomato

Tomatoes and sunchokes both carry verticillium wilt, so planting them side by side raises the fungus level in that soil. The 6-10 ft stems also shade a sun-hungry tomato badly by midsummer.

Bell Pepper

Peppers are susceptible to the same verticillium wilt this crop can host, and wilt in one bed tends to show up in the other. Keep peppers in ground that has not grown sunchokes, tomatoes, or potatoes recently.

Sunflower Choke

Close relatives that host the same white mold and powdery mildew, so side-by-side planting stacks the risk in one bed. Their tubers also intermingle underground and are hard to tell apart at digging — keep the two patches in separate beds.

Ginger

These grow 6 feet or more and take both the light and the water ginger needs, and digging their tubers churns the same top foot of soil the ginger occupies. Give them a separate bed.
