It's ready when stalks are ready when the base is at least 0.5 inch thick and the lower 4–6 inches are pale, firm, and tightly layered — typically when the clump is 12 inches or more tall. Grip a stalk firmly at the base and twist-pull downward, or cut with a sharp knife as close to the soil as possible. Take outer stalks first, leaving the inner ones to continue growing.
Wrap unwashed stalks in a damp paper towel, seal in a bag, and refrigerate for up to 2 weeks. Freeze whole stalks for up to 6 months.
