Why grow wheat

Growing your own wheat closes the gap between garden and kitchen — you can mill berries into fresh flour within hours of harvest. Even a 10-by-4-foot bed produces enough grain for several loaves and teaches the full grain cycle firsthand.

A little history. An annual grass domesticated in the Fertile Crescent roughly 10,000 years ago from wild emmer relatives; the modern bread wheat genome is hexaploid, meaning it carries six sets of chromosomes from three ancestral species.

From planting to harvest

Sow outside

Sow seeds 1 inch (25 mm) deep, and aim for 3 inches (8 cm) between plants once thinned. Press seeds firmly into the top half-inch of soil and keep the seedbed moist until shoots emerge; do not let the surface crust over. Seedlings emerge in 4–10 days.

Water and feed

All season

Water deeply at planting, at tillering (when side shoots emerge from the base), and again as heads fill. Water when the top 2 inches of soil feel dry during active growth stages. Aim for about 1 inch per week during stem elongation and grain fill.

Side-dress (scatter fertilizer along the row and water in) once at planting and again at tillering in early spring. What to use: balanced compost or a low-phosphorus organic granular; avoid heavy nitrogen after heading begins.

Harvest and store

It's ready when heads turn golden and the stem just below the head (the peduncle) dries to a straw color; bite a berry — it should be hard, not doughy. Cut stalks at the base with shears or a sickle when 90% of heads are golden. Bundle into sheaves and hang upside down in a dry, ventilated space for 1–2 weeks before threshing.

Thresh and winnow berries, then store in an airtight container in a cool, dry place. Properly dried grain (below 13% moisture) keeps for 1 year or more.

White Clover

Undersown white clover forms a low carpet between wheat rows that shades the soil, holds moisture, and crowds out weeds. Sow it after the wheat has tillered (put up side shoots) so the clover does not outrun the young grain.

Hairy Vetch

Hairy vetch banks nitrogen in its roots, and that nitrogen is released mostly for the following season as the roots break down. Grow it the winter before wheat or alongside it as a strip, then turn it under.

Field Pea

Field peas bank nitrogen in the soil that mostly feeds the next crop once the roots decay, which suits wheat's heavy appetite. Their sprawling vines also cover bare ground while the grain bed is being built up.

Keep it away from

Sweet Corn

Corn stubble is the main overwintering site for the fungus that causes head blight (scab) in wheat, which bleaches spikelets and taints grain. Keep wheat out of beds that grew corn, and do not plant the two side by side.

Barley

Barley and wheat host the same rusts, powdery mildew, and the aphid-carried yellow dwarf virus, so planting them together stacks the risk and lets infection jump between stands. Separate them by bed and by season.

Oats

Oats share wheat's grain aphids, the yellow dwarf virus they carry, and head blight. Growing them adjacent keeps a green bridge of hosts alive all season and raises disease pressure on both crops.

Teff

Wheat shares the rust and smut diseases of grain grasses, and volunteer wheat can carry spores over to a nearby teff patch. Plant them apart and clear grass stubble and volunteers before sowing teff.

Oregon Grape

Shrubs in the barberry family are the alternate host for stem rust of cereals: the fungus completes one stage on the shrub's leaves and moves to nearby wheat. Keep Oregon grape well away from grain, and check local rules — some regions restrict planting.

Rye

Wheat and rye host the same leaf rust, powdery mildew, and Hessian fly, so side-by-side plantings let problems build and carry over. Keep them in separate beds and separate rotation slots.
