Emmer tolerates drought and low-fertility soils better than most modern cereals, making it a practical choice for gardeners who want a heritage grain with minimal inputs. The whole grain stores well and cooks into hearty soups, salads, and porridges.

One of the earliest domesticated cereals, with archaeological evidence of cultivation in the Fertile Crescent dating to roughly 10,000 years ago according to standard archaeobotanical records. The grain remains enclosed in a tough husk (hull) after threshing, requiring a separate pearling or pounding step before milling.

Side-dress (scatter fertilizer along the row and water in) once at tillering in early spring. What to use: low-nitrogen source such as compost or 3–4-4 organic; excess nitrogen promotes lodging (stalks falling over).

It's ready when heads turn golden-brown and straw dries to a pale tan; squeeze a grain — it should be hard and resist denting with a fingernail. Thresh and winnow (separate grain from chaff by pouring in a breeze), then store unhulled grain in sealed containers in a cool, dry place; use within 2 years for best quality.

A thin undersowing of crimson clover between grain rows shades the soil, holds moisture, and crowds out weeds that would otherwise compete during the long season. Sow it sparingly at tillering so it does not outrun young emmer.

Field Pea

Field peas fix nitrogen that is released mostly for the next season as their roots decay, which suits a heavy-feeding grain grown in the same bed the following year. Grown as a preceding or following cover, not as an in-row neighbour.

Keep it away from

Sweet Corn

Corn and emmer host the same head blight fungus, and corn stubble left in or near the bed carries spores that infect wheat heads at flowering. Keep them in separate beds and separate rotation years.

Barley

Both are grasses that carry rusts, powdery mildew, and grain aphids, so planting them side by side lets problems bounce between the two stands. Grow one grain per bed and rotate out of grasses for two years.
